Els Fogons de Plaça
We all know that Spain is famous for its rice dishes, in particular Paella, and many, many more. In the second edition of an annual competition to find the best rice dish in Spain a small gastro-business from right here in Mallorca beat 1100 others from all over the country to the coveted prize.
Els Fogons de Plaça – not a restaurant, not a bar, but a takeaway – based in the centre of Bunyola, a small town which is the gateway to the Sierra Tramuntana mountains from Palma was judged to have the best rice dish by a jury of experts with just a few Michelin stars between them.
Chef Catalina Pons took time off work in the takeaway to travel to Leon – Spain's 2018 Capital of Gastronomy – to prepare her dish “arroz de carbonero” which is a staple on the menu at Els Fogons. It's a hearty winter dish, guaranteed to warm the cockles of the carboneros (charcoal makers – note the charcoal in the photo of the dish) as they spent long, cold, winter days in the mountains of Mallorca.
With lots of rice, meat, and vegetables including mushrooms, cauliflower and potatoes it would be an ideal dish for anyone who is staying in a villa or country finca during the winter and who needs filling up after a day's hiking, biking, or any other of the many outdoor activities available here in Mallorca.
Catalina was one of only 6 chefs from the original 1100 competitors chosen to travel to Leon and prepare her dish in front of the star studded panel but the experience hasn't altered her as she took time on Facebook to thank her regular customers and remind that as usual, her delicious, traditional Mallorcan cuisine would be on sale at €7 for the dish of the day and an incredible €8 for the Menu of the day.
