Coca Toneta

Hip country cuisine comes to a hip city rooftop bar as María Solivellas, chef of Ca na Toneta brings her summer 'pop up' offering Coca Toneta to the roof terrace of the Hotel Sant Francesc. So what's it all about?

María Solivellas specialises in producing traditional Mallorcan food using local produce and seasonal ingredients with an added touch of contemporary style in her 'rural chic' Caimari restaurant Ca na Toneta.

Now she's decamped, in an executive chef stylee, to the 200 square metre roof terrace of the fabulous boutique Hotel Sant Francesc which overlooks the square of the same name and the monastery of the San Franciscan order in Palma. It has great views as you can see!

Every night (19:00 – 22:30) until the end of October, the rooftop is transformed into a magical space, perfect for sipping cocktails, a glass of champers and enjoying some delightful gastronomic treats in small portions and ideal for sharing with friends or loved ones.

Maria has carefully curated a small but imaginative menu lovingly produced under her direction by chef Alvar Albadalejo and his team, which both hotel guests and visitors can enjoy.

The menu is based around a typical Mallorcan dish and one of Maria's specialities – Coca. It's a bit like pizza but with a 'flaky' pastry and some really, really imaginative toppings, great for sharing and all made from xeixa flour (wheat or bread flour) local olive oil and fresh local produce.

Try toppings as succulent as the mix of onion, spinach, orange, cottage cheese and pips; fried carrot, fennel and botifarrón; black suckling pig with dried Porreres apricot sauce; and octopus with onion. Add in a few dishes like anchovies and tomato, mussels, and shrimps, some cool music and a sunset to die for, and you have a perfect languorous evening under the stars.
